fermented greens

So i fermented so wild greens a while back...started them at the end of the summer!! it was a total basic process, i put the greens in a jar with salt and enough water to keep the leaves submerged when pressed. then put another jar(smaller) and screwed the large jar lid on so the small jar would press the leaves down. I left it for a couple weeks then transfered to water filled jar. im not sure how much they fermented but i guess some because they definately softened somewhat. Last night i just chopped them up and put some oil and vinegar on them...really good. I am also making my own blue cheese from a half gallon milk i boiled and added lemon juice to for curdling...mixed in a blue cheese inoculation..pressed it in a mold. now i am aging it for two months for the blue mold to develope. let you know how it is...half month left.
