great soup
So i just made the greatest soup that is pretty cheap and sustainable.
Wild greens (dandelion and lambs quarters)
Olive oil
Cornstarch
Thyme (dried and ground)
Water
Powdered chicken boullion
Pepper
I pureed the raw greens with the olive oil and some water to make a nice emulsification. I added the cornstarch to a pan of water and wisked it in til it disolved then added the greens emulsification to the pan and added the boullion and thyme and pepper. I turned the heat on and wisked it til it thickened...added a bunch more water and cooked on low for like 10 min to get the bitterness out. Very very good.
